I recently went to India and came back in April with the AP. They stamped on one paper and gave it to me. I then used the same copy when I went on Mexico Cruise this month, and when I came back in to US after the cruise, the first level immigration officer just verified our passports and APs, and then we were sent for secondary inspection where the officer asked us to fill I94. He just stamped on the same AP copy again and written down a new date for AOS until .... Stamped on the passport also as usual. So yes, you can use the same AP again till the valid date of the AP (not the date you are paroled until).
