Documents for previous employment with Consulting firm

Hello,
My wife has been working for a desi consulting firm (in EVC model) since January 2011 and recently got a job offer from a food services company. The new employer's H1B petition has been approved (don't know yet, but likely with extension of status/I-94). She will resign from the consulting firm and join the new employer by mid/end of May. She plans to travel to India in November/December 2012 and will likely appear for H1B visa interview at the Mumbai consulate.
Which documents from the current employer (consulting firm) should she collect and carry during the H1B visa interview? She would not be employed with them by that time. Note that she has all paystubs, W-2 for 2011, LCA's for the two changes in her job location, H1B approval notice, H1B petition and supporting documents from the consulting firm. She does not have contracts between employer, vendor and client, end client letter(s) or other supporting documents. Will such documents be necessary considering that these documents pertain to her previous employment?

She won't need any of old employers contracts with E V C. As mentioned by you she already has all H1 related documents. Then the only main document remains is the experience letter from this employer and if possible from the end client too.
