Your questions become subjective, and i can only answer them in my view point. Also i am not an attorney to suggest.
1. Should we change our lawyer now? — No Need ..go with this attorney as he is doing due diligence before taking any step. delay does not mean that he is doing intentionally just for you.
2. Can we change our lawyer now, at this point when teh I140 has been applied(it was applied last week)? — as per PERM and I140 is concerned they are your employers petitions and not yours- hence employer hires the attorney. Hence your employer has to agree to the change and when your employer has a new attorney you they need to file a new G28. But i would suggest to wait and if you do not like this attorney to file your I485 which is your petition and has nothing to do with the employer you can then choose the attorney of your choice.
3. Should we go for premium processing? -The attorney was right, there is no need of it. You will not miss the boat b'cos you can file I485 even when your I140 is pending approval.
